Imagine the scene, an elderly man is going through the final minutes of his life, suddenly he smells the intoxicating aroma of these sesame snaps wafting up to his bedroom. His forces himself to his feet and staggers down the stairs, struggling with all his might to reach them...

...He feasts his eyes on the sesame snaps spread out on the wire rack and reaches out to take one when suddenly…he wife raps him on the knuckles with the rolling pin. She tells him that these were baked especially for the funeral! The moral of this tale…Don’t leave it too late to bake these tasty little sensations… enjoy now and live for the moment!

SERVINGS: 6

INGREDIENTS:
75g (3 oz) soya margarine
2 tbspn soya milk x175g (6 oz) whole wheat flour
Pinch of salt
25g (1oz) sesame seeds
1 tbspn malt extract
50g (2 oz) medium oatmeal
1 tspn baking powder
Soya cheese for serving.

METHOD:
Pre heat the oven to 375°F, 190°C, Gas Mark 5.

In a mixing bowl combine the oatmeal, salt and flour along with the sifted baking powder.

Add the margarine and rub together to form breadcrumbs.

Use a whisk to beat the milk and malt together. Pour into the dry ingredients and add the sesame seeds. Mix well to form a stiff dough.

On a floured work surface, roll out the pastry very thinly.

Use a pastry cutter to make 6cm (2 ½ in) rounds.

Place on a lightly greased baking tray and cook for 15 minutes until lightly browned.

Cool on a wire rack, top with grated soya cheese and thank heaven for these glorious moments!
