GRANNY’S DAIRY FREE CHEESY BITE

There is nothing more exciting than trying out a new dairy free cheese when it comes on the market. The best way to put it to the test is to make some cheese straws or biscuits to sample its richness when it is blended with other ingredients. Cheese biscuits are great to make with the kids on a rainy day as they love squishing all of the ingredients together, they also go down well at parties and provide the kind of comfort food that toddlers enjoy…lovely, simple party food for children and adults…

SERVINGS: 16 depending on size

INGREDIENTS:

- 150g (5 ½ oz) grated strong smoked Cheddar style Scheese
- 100g (3 ½ oz) plain white flour
- 2 teaspoons baking powder
- Dash cayenne pepper
- 100g (3 ½ oz) soya margarine
- 2 egg yolks

METHOD:
Heat the oven to 350°F, 180°C, Gas Mark 4.

Lay two baking sheets on a work surface.

In a mixing bowl sift the flour, cayenne pepper, baking powder and add soya margarine. Rub the ingredients together to form fine breadcrumbs. Sprinkle in the Scheese and rub into the mixture.

Add two egg yolks to the bowl and whisk together to form a stiff dough.

Lightly dust a work surface with flour and roll out the dough.

Cut into straws, rounds or use a pastry cutter to make fancy shapes.

Place on a baking sheet, transfer to the oven and cook for ten minutes or until lightly golden.

Allow to cool on a wire rack and serve.

1 425g (15 oz) tin unsweetened chestnut puree
175g (7oz) caster sugar
175g (7 oz) soya margarine
