SERVINGS: 2

INGREDIENTS:
For the pastries:
6 oz (170g) wholemeal breadcrumbs
2 oz (55g) raw cane sugar
2 0z (55g) soya spread
Soya cream, chopped nuts or dairy free chocolate

For the puree:
3 oz (85g) clear honey
A few drops of water
The grated rind of one lemon
The grated rind of one orange
1 cinnamon stick

METHOD:
Melt the soya spread in a pan and fry the breadcrumbs until they start to crisp. Pour in the sugar and mix well.

Wet the bottom of a saucepan, wash and wipe the apples, removing the stalks. Cut into small chunks and add to the pan along with the grated fruit rinds and cinnamon. Pour the honey over the top.

Poach until the apples start to soften. Run them through a sieve and allow to cool.

In a separate bowl, line the bottom with a layer of puree followed by a layer of the breadcrumbs. Finish with a breadcrumb topping.

Cover the top with your favourite accompaniment which could be chocolate, nuts or even dairy free ice desert.
