Dreamy Chocolate Pudding With A Hint Of Passion

This has to undoubtedly be one of the most divine puddings I have ever tasted. There are no sickly properties whatsoever and at no point will anyone mutter any fake yummy noises...

...This is the sort of pudding which will go down well at any occasion even those that involve your PJ’s, a warm duvet and a good supply of DVD’s. One mouthful of this dreamy sensation and it will feel as though someone is hugging your heart. Soothingly sweet and guaranteed to make the day work out perfectly for you.


150g (5oz) soya margarine
2 medium sized oranges
2 lemons
1 packet original tofu
2 tbsp caster sugar
4 passion fruit
2 tsp corn flour immersed in 6 tsp water
200g (7oz) dairy free plain chocolate
1 tbsp golden syrup
1 tsp vegetarian gelatine
300 ml (1/2 pint) water
250g (9oz) digestive biscuits

Use greaseproof paper to line a 20cm (8 in) flan tin.

Make the base of the flan by placing the biscuits in a sealed bag and crushing them with a rolling pin.

Melt the soya margarine in a pan, remove from the heat and add the crushed biscuits. Mix well.

Press the mixture down onto the base and sides of the flan tin and cool in the fridge for 1 ½ hours.

Make up the sauce by squeezing the juice of the lemons and oranges into a pan. Follow this by scooping out the flesh of the passion fruit; add to the pan along with the sugar. Pour in the corn flour mixture and heat gently over a low heat until the sauce begins to thicken. Press through a sieve and set aside to cool. Make in advance and freeze for up to one month.

Half fill a saucepan with water and bring to the boil. Place a glass bowl on top and add the chocolate squares. Stir until all of the choccie has melted.

In another saucepan, sprinkle the gelatine into water and simmer on a low heat for 2 minutes.

Pour the dissolved gelatine into a blender along with the tofu, melted chocolate and syrup. Blend until silky smooth.

Pour the cream sauce into the flan base and leave to set in the fridge for 2 hours.

Cut into individual portions and pour passion fruit sauce over the top. Add a strawberry for decor.
