This has to undoubtedly be one of the most divine puddings I have ever tasted. There are no sickly properties whatsoever and at no point will anyone mutter any fake yummy noises...

...The proof of the pudding really is in the eating with this spiced up version of an old classic which always seems to go down well. An assiete of juicy, soft plums lie snugly beneath a platoon of buttery crumble. Such a delicious combination…you will instantly fall in love.

SERVINGS: 6

INGREDIENTS:
For the filling:
700 g (1 ½ lb) fresh plums
75g (3 oz) sugar
For the crumble:
75g (3 oz) sugar
1 teaspoon baking powder
1 teaspoon allspice
75g (3 oz) soya vegetable spread
225g (8oz) plain whole wheat flour

METHOD:

Preheat the oven to 375°F, 190°C, Gas Mark 5.

Slice the plums in half and remove the stones. Place them in a shallow pie dish and scatter sugar over the top.

FOR THE CRUMBLE:

Sift the flour into a bowl. Add the allspice and baking powder.

Remember to add any bran which is left behind in the sieve.

Add the sugar and soya vegetable spread. Using your fingers, make a crumble and sprinkle it over the top of the fruit, pressing down lightly with the back of a spoon.

Bake for 30 minutes.
