...What better way to tap into our natural resources than with the delicate flavour of avocado and mushrooms. An impressive way to start the evening and to make the taste buds sing. The delicate palor of the mushrooms is invigorated by the crisp, greenness of avocados and spring onions. Add to this the zingy zest of lemon juice and a sprinkling of toasted sunflower seeds and wait for the praise to commence.

SERVINGS: 4

INGREDIENTS:
1 large ripe avocado
Salt and freshly ground black pepper
3 tablespoons freshly squeezed lemon juice
4 spring onions, finely chopped
225 g (8oz) sliced, button mushrooms
1 tablespoon toasted sunflower seeds

METHOD:
Place the mushrooms in a mixing bowl.

Immerse in 2 tablespoons of the lemon juice. Add the spring onions, sunflower seeds and seasoning.

Distribute the ingredients thoroughly and chill in the fridge for 30 minutes.

When your guests arrive, peel and stone the avocado. Slice the flesh into strips and coat in the remaining lemon juice.

Arrange the colourful ensemble on small serving plate.
