Velvety Broccoli Soup

Worries go down better with soup. So give your dinner guests the chance to unwind and enjoy some warming comfort food with an irresistible combination of fresh broccoli and vegan soured cream to create a creamy softness that they will instantly fall in love with...

...This is easily the smoothest and loveliest broccoli soup that diners will have tasted in a very long time.

SERVINGS: 6

INGREDIENTS:
750g (1 ½ lb) fresh broccoli florets
1 tablespoon dried mixed herbs
Seasoning according to taste
900 ml (1 ½ pints) vegetable stock
350g (8 oz) soya cream
¼ teaspoon lemon juice

METHOD:
Steam the broccoli florets for 6 minutes or until they are perfectly tender.

Transfer to a blender and liquidize with the herbs and stock until smooth.

Add salt and freshly ground black pepper.

Reheat but do not allow the soup to reach boiling point.

Make up the soured cream by combining the lemon juice with soya cream.

Serve with a swirl of soured cream on top.
