...There are good days and there are bad days but this cherry cake will always be cherry cake, so when the going gets tough, the tough reach for heavenly slice of this sweet comforting, calming slice of peace and quiet.
240 ml (8 fl oz) water
375g (13 oz) white self raising flour
60 ml (2 fl oz) vegetable oil
¼ tsp salt
2 tsp vanilla essence
300g (11 oz) light muscovado sugar
100g (4 oz) halved glace cherries
1 tbsp white vinegar
Pre set the oven to 350°F, 180°C, Gas Mark 4.
Fill a mixing bowl with the glace cherries, flour, salt and sugar.
Make a well in the centre of the dry mixture and add the water, oil, vanilla essence and vinegar. Beat well until smooth.
Pour the mixture into a 20 cm (8 in) cake tin.
Bake for 30 minutes, remove and cool on a wire rack.
