Fruity Vegan Scones
Submitted by: DairyFree.me
If you want it all and you want it smothered with vegan whipped cream and jam, these simple scones are the answer to your prayers. There is nothing more typically British than scones with a cup of tea tea...

...Enjoy them hot or cold and with a selection of different flavoured jams. This way, life really can be like a box of chocolates because you will never know what flavour sensation you are going to enjoy…

100g (4 oz) self raising flour
50g (2oz) soya margarine
A drop of soya milk
50g (2 oz) self raising flour
125g (4 oz) sultanas

Pre-heat the oven to 400°F, 205°C, Gas Mark 6.

In a mixing bowl, combine the margarine and flour. Use your fingers to rub the ingredients together until they resemble a breadcrumb consistency. Add the sultanas.

Make a well in the centre of the mixture and pour in enough milk to make a soft dough.

On a floured surface, knead for 3 to 4 minutes.

Roll out the pastry until it is 2cm (3/4 in) thick.

Cut out rounds of dough with a pastry cutter approximately 7.5cm (2 in) in size.

Place on a greased baking tray and moisten the tops with soya milk.
Bake towards the top of the oven for 15 minutes until golden brown.
Cool on a wire rack.
